Formulation notes
- Masking: dose it with your main flavour, not instead of it.
- Dosage: 0.1–0.2% protein milks and smoothies · 0.2–0.4% bars · about 0.5% powder. 10X codes: about a tenth.
- Powders: liquid flavours blend into dry mixes. Tell us your process and we suggest proven codes.
- Boosters: Cocoa Booster lifts chocolate without cocoa; Sugar codes add perceived sweetness.
2026 trends
- Everyday protein: yoghurts, drinks and desserts that must taste indulgent.
- Dessert profiles: cookies & cream, white chocolate, caramel, cheesecake, biscuit.
- Plant protein: pea, soy and oat need more masking than whey.
- Less sugar: stevia or monk fruit: masking plus a sweetness modifier.
Sports food or supplement?
- Protein powders, bars, RTD shakes and most sports products are food in Australia (formulated supplementary sports foods): our core business.
- Capsules, tablets and some powders or gummies are complementary medicines listed with the TGA.
- It depends on format, ingredients and claims. Not sure? Tell us how your product will be sold.

Frequently asked questions
How do you stop protein powder tasting bitter?
Use a Masking flavour with your main flavour. It covers protein bitterness and sweetener aftertaste.
What dosage is used in powder or bars?
About 0.5% in powder, 0.2–0.4% in bars, 0.1–0.2% in milks and shakes.
Do your flavours work with plant protein?
Yes, and that is where masking matters most. We sample a Masking code with your flavour in your own base.
Can you match our current flavour?
Yes. Send us the product or flavour and our flavourists develop a close match for you to test.
Are they suitable for a clean label product?
Yes. 100% natural, vegan, gluten-free, GMO-free, sugar-free, free from additives and allergens.
