Metarom Australia supplies water soluble natural flavours for flavoured beer, radler, hard seltzer, alcohol-free beer and beer-based drinks. Flavours are made in Banksmeadow, Sydney, dosed at around 0.1% in a finished beverage, and available from a 10kg minimum order (8kg on ethanol-carrier codes) with a 5 business day lead time plus transit.

Brewers use flavour for two jobs: building a flavoured or fruited product, and rebuilding the taste that comes out when alcohol comes out. Both are served from the same water soluble ranges, and both are usually dosed post-fermentation so the flavour is not stripped or altered by the ferment.

For alcohol-free and mid-strength beer, the practical problem is body and aroma rather than sweetness. A fruit or citrus top note plus a masking flavour is the usual combination, and our Alcohol Booster and Smoke flavours exist for exactly this kind of rebuilding work.

What is driving beer flavour choices in 2026

Among European beer launches between January 2024 and December 2025, the five most-used flavours were lemon, mango, lime, raspberry and grapefruit, with peach and ginger the clearest risers through 2025.

No and low alcohol is the strongest structural trend in the category. Alcohol-free beer is growing fastest with drinkers aged 18 to 25, and the products that win are the ones that reproduce the taste of their full-strength counterpart rather than tasting like a compromise.

Flavoured beer has moved from novelty to a standing segment. Fruit, citrus, exotic fruit and botanical profiles bring in drinkers who do not like traditional bitterness, and limited editions give brands a low-risk way to test a profile before committing a line to it.

Craft continues to grow, and with it an expectation of provenance. A locally manufactured flavour with a published spec sheet, a 10kg MOQ and a 5-day lead time is easier to defend on a craft label than a drum imported on a 12-week lead time.

Technical notes for brewing

  • When to dose. Flavours are normally added post-fermentation, at blending or bright tank, so nothing is lost to the yeast or to CO2 scrubbing.
  • Solubility. Use water soluble flavours only. Ethanol-carrier codes from the Beverage range disperse fastest in a cold, low-alcohol matrix; MPG-carrier codes are water soluble and heat stable if your process includes a heat step.
  • Alcohol-free rebuilds. Alcohol Booster, Smoke and the Masking range are designed to restore mouthfeel and warmth cues and to cover wort or cereal off-notes in de-alcoholised beer.
  • Concentrates. 10X versions of many fruit flavours are available where you need the same impact at a fifth of the dose rate, which reduces cost per hectolitre on volume runs.

  • Minimum order: 10kg for natural liquid flavours. Some ethanol-carrier beverage flavours are packed in an 8kg drum; each flavour page states its own figure.
  • Lead time: 5 business days plus transit, Australia-wide. We aim to confirm a purchase order the same business day.

  • Shipping: DAP fees are charged per purchase order - A$100 flat to metropolitan Australia, and A$100 plus A$5 per kg to regional Australia and New Zealand. Delivery only, no pick-ups.

Frequently asked questions

Can natural flavour be added to beer after fermentation?

Yes, and that is the normal approach. Dosing at blending or bright tank keeps the flavour profile intact, because nothing is lost to fermentation or CO2 scrubbing.

What flavours work best in alcohol-free beer?

Two things in combination: a fruit or citrus top note for drinkability, and a masking or booster flavour to replace the body and warmth that the alcohol provided. Our Alcohol Booster, Smoke and Masking flavours are made for this.

What dosage should we start at for a flavoured beer?

Around 0.1% of the finished volume for a standard natural flavour is the usual starting point, adjusted on tasting. Each flavour page publishes its own dosage ladder.

Do you supply small breweries?

Yes. Minimum order is 10kg, and 8kg on ethanol-carrier beverage codes, so a single drum is a real order rather than an exception.

Are the flavours suitable for a gluten-free or vegan claim?

All our flavours are gluten-free, vegan, GMO-free, sugar-free and free from additives and allergens. They do not affect a gluten-free claim on the finished beer.
