Natural Flavours for Confectionery and Chocolate
Metarom Australia manufactures oil soluble natural flavours for chocolate, compound coatings, chewing gum, fat fillings, popcorn and sugar confectionery at its ISO 22000 site in Banksmeadow, Sydney. Typical dosage is 0.5% for chocolate and gum, and 0.3% for a fat filling. Minimum order is 10kg with a 5 business day lead time plus transit.
Confectionery is where solubility decides everything. A water soluble flavour will not disperse properly in a fat-based system, so chocolate, compound coating, fat filling, gum and popcorn seasoning all need an oil soluble flavour. Our Oil Soluble range uses MCT, triacetin, citrus oil or orange oil carriers, and most of it is marked heat stable, which matters for tempering, panning and extrusion.

What is driving confectionery flavour choices in 2026
Cocoa cost is the dominant commercial fact in the category. Sharp rises have pushed manufacturers towards compound coatings, lower-cocoa recipes and reformulation, all of which lean harder on flavour to hold the eating experience - Cocoa Booster exists for precisely this job.

- Use oil soluble flavours. Chocolate, compound coatings, fat fillings, gum and popcorn seasoning are fat-based systems and need an oil soluble flavour. A water soluble flavour will not disperse correctly and can affect viscosity.
- Heat stability. Triacetin and MCT-carrier codes are marked heat stable, which is what allows them to hold through tempering, panning and extrusion.
- Dosage. Published ladders read 0.2% for protein-rich bars, 0.3% for fat filling, 0.4% for popcorn and 0.5% for chocolate and gum.
