What is happening in the brioche market
An emblematic product of the bakery and indulgent pastry segment, brioche holds a special place in the European cereal-based products market. Straddling bread and pastry, it embodies tradition, indulgence and comfort, with a strong cultural anchor in France.
The brioche market faces several major challenges: rising raw material costs, price pressure, and higher consumer expectations for naturalness, ingredient quality and sustainability.
Consumption times are changing too. Traditionally a breakfast and afternoon snack product, brioche now appears in snacking, quick-service restaurants and festive occasions. These changes come with structural trends such as premiumisation, the growth of clean label and plant-based recipes, and a search for balance between taste and a more responsible image.

Babka, the star of the trend, combines artisan aesthetics, generous indulgence and sensory innovation. Popular recipe inspirations include marbled chocolate brioche, babka with chocolate spread and pistachio, mini rolled brioches with chocolate chips, and puff pastry brioches with hazelnut praline, cinnamon or pear confit centres.
