The top 5 cake flavours introduced in Europe between January 2024 and December 2025 were chocolate, cacao, vanilla, butter and hazelnut, with lemon, raspberry and pistachio the up-and-coming flavours of 2025. Pistachio was the flavour of the year, driven by the Dubai chocolate trend, alongside snack-size formats, lower-sugar recipes, frozen bake-at-home products and hybrid pastries.

What is happening in the cakes market
The cake (yellow cake dough) market is defined by the balance between tradition and innovation. Consumers continue to favour traditional recipes and familiar brands, which they associate with trust.
The industry faces significant raw material challenges. Butter, flour, egg and cocoa prices have risen sharply, driven by unfavourable weather and geopolitical tensions. These price rises, sometimes with real shortages, are pushing manufacturers to explore alternatives or adapt recipes while preserving quality and transparency.
Cakes remain a staple at breakfast and snack time: in Europe, nearly four in ten consumers eat sweet pastries at least once a week. The market has a strong French identity, and families with children or teenagers are the main consumers. Products must win kids over with taste, indulgence and fun sizes, while reassuring parents, who make the final decision.

Consumers want products that blend authenticity with originality. Traditional pastries reassure through heritage and comfort, and become more attractive when reinvented with new flavours or indulgent pairings.
